Ingredients

  • 2 pounds small zucchini
  • 3 to 6 scallions or green onions
  • 3 tablespoons finely chopped dill weed
  • 4 ounces butter
  • Salt and pepper to taste
  • Directions

    Cut zucchini in half length wise and then across in pieces ¼ inch thick, or they may be julienned. Chop scallions fine, including green part Melt butter in baking dish. Toss all ingredients in the butter and cook at 350 degrees, covered, for 35 to 45 minutes. Zucchini should still be a bit crisp.

    Serves 5 to 6
