Ingredients

  • 1/2 cup olive oil
  • 3 cloves garlic, mashed
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 teaspoon powdered coriander
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon powdered ginger
  • 1 medium eggplant, peeled and cut into 3/4-inch cubes
  • 3 to 4 tomatoes, chopped
  • 1 tablespoon brown sugar
  • Directions

    Preheat oven to 375 degrees. Cook garlic, onion, pepper, coriander, turmeric, cumin and powdered ginger in olive oil slowly for 10 minutes until onion is translucent. Add eggplant tomatoes and brown sugar end place in buttered casserole. Cook 1 hour at 375 degrees.
