Ingredients

  • 1/4 cup butter or margarine
  • 2/3 cup chopped onion
  • 4 1/2 cups cooked rice
  • 1 1/2 cups chicken broth
  • 1 teaspoon curry powder
  • 3/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1 tablespoon grated orange rind
  • 1 1/2 cups peeled, diced apples
  • 1 cup seedless raisins
  • Directions

    Melt butter. Add onion and cook until soft. Add rice and broth, curry powder, salt, cinnamon, orange rind, apples and raisins. Mix well and bring to a boil. Put in 2-quart casserole. Cover. (Can be made ahead up to this point.) To serve, put in 350 degree oven and heat 30 minutes. Good with chicken, ham or pork.
