Ingredients

  • 4 fresh cornish game hens
  • Salt and pepper
  • 2 tablespoons butter
  • 1 cup chopped fresh tomatoes
  • 1 cup sliced fresh mushrooms
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup dry white wine
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sliced stuffed olives
  • Directions

    Pat hens dry and season inside and out with salt and pepper. Fold wings back and tie legs together. Brown hens in butter in skillet. Add tomatoes, mushrooms, onion, garlic, seasoning and wine. Bring to a boil. Cover, reduce heat and simmer 45 minutes or until hens are tender. Remove to serving platter. Add cheese and olives to the sauce. Heat and spoon over and around the hens.
