Ingredients

  • 5 to 6 tablespoons flour
  • 1/2 teaspoon salt
  • Serveral grinds whole pepper
  • 12 slices fresh turkey breast
  • 4 tablespoons butter
  • Sauce
  • 1(7 ounce) can tuna fish with oil
  • 1(2 ounce) can anchovy filets with oil
  • 2 cups dry white wine
  • 1/4 teaspoon thyme
  • 1/4 teaspoon white pepper
  • 1 1/2 cups mayonnaise
  • Juice 1 lemon
  • 2 cups dry white wine
  • 2 to 3 cups strong chicken stock
  • 1/4 teaspoon sage
  • 2 teaspoon capers
  • Directions

    Purêe in blender the tuna fish, anchovies, wine, lemon juice and all seasonings. Combine the purêe and mayonnaise. Add enough ch icken stock to make a smooth sauce as thick as mayonnaise. Stir in capers. Taste and adjust seasoning. Pour sauce over turkey slices. Garnish as desired and serve cold.
