Ingredients

  • 1 1/2 pounds or 6 medium ripe
  • tomatoes, chopped
  • 1 1/2 pounds or 6 medium sour
  • apples, chopped
  • 2 quarts cider vinegar
  • 5 lemons, grated rind and juice
  • 1/2 pound or 1 cup solidly packed brown sugar
  • 1 1/2 pounds or 4 1/2 cups raisins
  • 1/4 tablespoons salt
  • 1/4 pound oil 1 to 2 medium
  • onions, chopped
  • 2 ounces or 4 to 6 cloves garlic, chopped
  • 1 tablespoon curry powder
  • 2 ounces or 10 tablespoons ground ginger
  • 2 ounces or 9 tablespoons dry mustard
  • 1/2 ounce or 2 tablespoons cayenne pepper
  • 1/4 ounce or 1 tablespoon turmeric
  • 1/4 ounce or 2 teaspoons white mustard seed
  • Directions

    Boil tomatoes, apples and vinegar together until soft. Mash through a colander. Put this mixture and all other ingredients into a kettle and boil 1/2 hour, stirring constantly. Bottle and seal.

    Yield: About 2 quarts
