Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 egg
  • 1 tablespoon sugar
  • 1 lemon squeezed
  • 1 cup cooked carrots, mashed
  • 1 quarts frying oil
  • 1/4 cup powdered sugar
  • Directions

    Mix together flour, baking powder, egg, granuk, sugar, lemon juice and carrots. Heat Oil to 375 degrees in a deep fat fryer. Drop mixture by teaspoonful into the hot oil and cook until golden brown. Drain, sprinkle with powdered sugar and serve.

    Yeild: 36 fritters or 6 servings
