Enjoy this modern Brandy-Jam Loaf Cake recipe. 

Ingredients

  • 3/4 cup butter
  • 1 1/2 cups sugar
  • 3 eggs, beaten
  • 1 teaspoon ground cloves
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup sour milk or add 1 teaspoon baking soda to sweet milk
  • 3 1/2 cups flour
  • 1 cup strawberry or peach jam
  • 1 cup raisins
  • 1 cup chopped pecans
  • 1 cup chopped preserved citron
  • 1 cup brandy to pour over
  • Directions

    Cream the butter and sugar. Add the eggs beaten well with the spices. Add the sour milk alternately with the flour and when well blended, add the jam, raisins, pecans, and citron. Fold in gently. Pour into a greased 10-inch tube pan. Bake in moderate oven (350 degrees) for 50 to 60 minutes or until toothpick tested in center comes out clean. Unmold and while still warm, pour brandy over the top.
